Such a tough decision. I voted for Young Frankenstein. The first time I saw it I thought the pace was almost unbearably slow, but I was going in with expectations based on Mel's other, more manic films. The pacing is actually really close to the kinds of films it is sending up, and is actually just right.

There's a few I'm not familiar with but the Producers, Blazing Saddles, High Anxiety, History of the World and Spaceballs are all great in my book. The quality tails off a bit, but not so far as to actually be bad or unenjoyable. Just less good.

When I was a kid, my mom would occasionally comment (with a grin) to my dad that he hadn't touched his food. He would stick his hands in it and yell, "There, I touched it!" This is a family classic, and up there with Fast Times as an all-time comedy for me. Plus, mid-70s era Teri Garr makes me a bit weak.
Feldman, Hackman, Kahn, Leachman, Brooks himself as the cat getting hit by a dart.

Like I said kerble, Harvey Korman's performance is one of the all-time comic greats. Worth seeing for that alone (and there's so much more).

I do like The Producers a lot. Never had the inclination to watch the re-make.
Blazing saddles still cracks me up though. Purile and fantastic.
