I loves me the Kraut, sweat or sour, but I like sour kraut on Brats with mustard and pickels the best... slight waffle factor as it makes me sour fart... :oops:

I don't much favor the white cabbage kind. I don't know if the below counts as sour kraut, but it's darn fine pickled cabbage:

1 red cabbage
1 big yellow onion
2 granny smith apple
some brown sugar
some cider vinegar
some bacon grease

cut the onion in half then slice it thin. carmelize it in some bacon grease. cut the cabbage in half, core it, slice it thin. Melt some more bacon grease in a big pot, add a bit of water, toss in the cabbage, mix 'round, then cover it. Cook that business down some, toss it around, etc. When it's all sweated down get yer pan of greasy bacon warm (if it's cooled off), dump the onions on the cabbage and deglaze the pan with some vinegar. Toss some more vinegar in on the cabbage and stir it. Stop when it's a nice magenta color. Add a wad of brown sugar. Peel and core the apples, then clice 'em thin and toss them in the pot and stir. It's probably hot and done, so cover it and turn off the heat. when cools, let it fester in the 'fridge for a day. You might wanna adjust the acid/salt/sweet combination after the festerment.

Good with some polish sausage and maybe a plate of spaetzel. Also, not as windy as the white kind
