Anyone else ever try this?
I did an inventory of my refrigerator/freezer last Sunday and it being hot, wanted to cook outside. Didn't have much around but noticed a ball of fresh mozzarella, some frozen pizza sauce, yeast, other cheeses. I have tons of fresh basil in the garden as well.
Based on the dough recipe in the BBQ Bible, I made a nice dough, twice-risen, put a bit of ground flaxseed in for binding, unbleached flour, olive oil, sea salt. Nothing unusual.
Fired up the coals, made a single layer, flattened out the dough and greased it up liberally.
I have to say that it's the best pizza dough I ever made, and one of the best I've ever eaten. Lightly charred, very light, thin and crispy. Melted the cheese on the colder side of the grill. Man, it was good. I want to make this every weekend now.

4Yeah.. flatbread I guess. I've made plenty of bread and the like, using huge old baking ovens, home oven etc.
The dough didn't stick at all and the smoky flavour and having it sit right on the grill was magic to me. Really fun, but you have to work quickly.

6I did one a while ago with grilled chicken, pesto, mozz, some vegetables and shit.

7Be sure the coals are quite hot. I have a large rectangular grill and made the coals into a single layer, spread out evenly.
I placed the dough on a well-oiled cookie sheet and spread it into an oval shape, flipped it over. Be careful placing it on the grill. Slide it on, takes only minutes to cook each side.

8I have a built in gas grill with the house. Can I expect a better pizza than the oven or do I need the charcoal?
If so, I am thinking about buying a charcoal grill just for that purpose.

9I keep hearing this makes the best pizza one can concoct without a billion-degree pizza oven, but it's not easy.
Sounds like more work than I'd care to put in (I have zero baking experience, so even making the dough would be a chore), but I'd love to eat someone else's. Sounds delicious. As any New Yorker will tell you, the secret to a great pizza is getting it "well done". That char on the crust is the best.
